Chef Church...

I live and work in Glenwood Springs, and like most men my age I'm looking for a way to drop a few pounds that doesn't involve a six mile run out to Noname and back. So I read weekly emails from Chef Church's Garnish Restaurant, and the only thing that bothers me more than the fact that I don't eat anything like the healthy cuisine he serves, I sometimes serve Eggo waffles to my kids before school.

Despite this embarrassing admission, I relish seeing Chef Church's weekly menus in my in-box, if only because rare occasions, Chef Church inspires me to cook.

Please--nobody tell my wife...

    Well, I must say, from experience... your guacamole dip is indeed the best I've ever had. I watched you methodically, passionately dice up the cilantro, onions, tomatoes, etc... from your garden at my JimBob Jumpback pad at our blogger party. In fact, I still have the knife and cutting board and bowl. Anywhoo... I was quite impressed.
    Personally, I would have added a bit more lemon and/or lime... but I was quite impressed with your chef skills. Stay cool. -- J

    Hi Jon,

    Regarding the utensils, I left them knowing you were in a state of semi-bachelorhood... It's been a few years, but I'm not so old that I've forgotten the real limitations of many young men when faced with an empty cupboard. I suspect age does little to effectively remedy this.

    As to the guacamole, I can't take full credit for that. My mom made a quick list of ingredients while observing a woman mix guacamole at the table of a Sante Fe restaurant. The fact that my attempt to resurrect those flavors made an impression on you is good to see... in a "teach a man to fish" kind of way.

    Truth be told, what I learned about barbecue that day dwarfs anything you learned from me about smashing avacados... That was some damn good food...

    Am surprised you didn't let the cat outta the bag.... the real secrets are onion, hichory smoke sauce, garlic, honey and butter. I get a woody thinking about it now. Careful Reckless. Its all good.
    I' ve been completely sober now for almost 3 months. Its very cool, actually. I decided to start living life, not dodging it, not watering it down. The fruits have been incredibly over-abundant.

    Hey guys,

    I concur; that guacamole was the BEST! Woody worthy? Maybe, but I wouldn't know about such things, being a girl and all.

    I'm very impressed with both of yous. Mitch for making the effort to drop a few pounds (but I hope that doesn't mean giving up our lunch meetings). And Jon for laying off the bottle. Although I have to admit I'm having a hard time picturing you without a Shiner Bock in hand.

    As inspiring as you both may be, I'm content to stay lazy, fat, and drunk. At my age, getting healthy is just too damn much work!
